Ingredienten: Red Pepper Coulis
7 4 Red Peppers, Deseeded
7 2 Carrots
7 1 Leek
7 1 Celery Stick
7 2 Shallots
7 2 Cloves of Garlic
7 3/4 Pint tomato juice
7 2oz Butter
7 Salt & Pepper
7 Pinch of Sugar
7 2 Cups of Fish Stock.
Voorbereiding:
Bereidingswijze: Sweat the carrot, celery, leek, onion and garlic until tender without colouring, add the diced red pepper and cook gently until the peppers are soft. Add the tomato juice, salt, pepper and sugar. Whizz in the blender until smooth, the pass thorugh a fine sieve. Return to the heat and add the fish stock. Adjust seasoning and keep warm until you are ready to serve.
